My Mom used to start with the bottom up for the first hour and then would flip it over. This is not easy though as the turkey can be a bit slippery so we always make sure to have an extra pair of clean oven mitts for the flipping and then toss them right in the wash! I do hear tenting and a rack inside the roasting pan to get the turkey up off the bottom can help too.

Tent with foil and take off last hour to brown. Check your oven temp. Hope you all had a wonderful thanksgiving. Or brown first then tent with foil, till cooked.
