I have heard that one should use three different varieties of apples in each pie.

Honestly, everything is better in a pie! Chicken pot pie, beef better!
Apple pie is my favourite to make. Gravensteins are the only apple my grandmother and I will use for pie. In a pinch, you can use Northern Spy. ( Cause Grav season is short).
When I am lazy I just make strudel which is essentially a flat pie.

Haven’t in awhile, but I like to do an apple pie with Cortland apples. My favourite pie to eat is pumpkin pie. My 100 year old mother in-law is the ribbon winning pie maker of the family. Baking is therapeutic.
